The other day I whipped up herbal honey for my family and friends. Here are the ingredients:
Echinacea
St-John's Wart
Elderberries
Yarrow
Dandelion
Mullein
Rosehips
Ginger (dash)
Cinnamon (dash)

Once your honey herb has boiled gently for about 15 minutes, you can strain out the herbs and let it drip into the container of your choice. Preferable glass or earthenware. Small 6-8 oz. canning jars work well.
I give my children about 1 tsp once to twice per day. My husband takes some too.
You can make your own with whatever herbs you would like. Look up herbs at the bulkherbstore.com to find out what they do and if they are safe for children/pregnant and nursing mothers. I shouldn't take Yarrow - it has a drying effect - because it can cause my milk supply to fall a little. I don't think a tsp a day would, but I will likely avoid it anyway. Since the winter is dry anyway, I should be careful. But Yarrow is wonderful for children and has antimicrobial and antiviral properties. A very simple and powerful immune booster would be simply echinacea, elderberries, and powdered vitamin C (or rosehips).
